Although the Philippines is much influenced by Spanish and American culture many fields including cuisine, the fundamentals of suman remain the same. Suman originates from the harvest feasting of early Filipinos before the histories with the Spanish, American, and Japanese colonizers existed Suman is a rice cake originating in the Philippines. It is made from glutinous rice cooked in coconut milk, often wrapped in banana leaves or buli or buri palm leaves for steaming. It is usually eaten sprinkled with sugar or laden with latik.
